My kids had the brilliant idea one Saturday morning to use the remainders of our day old loaf to make corn flake French toast. Let me just say -that stuff was worthy of its own post! We simply drenched slices of this bread in egg and cream. Then we dipped them in crushed corn flakes with cinnamon and pan fried it all in butter. All I can say is...try this. You can thank me later.
I've also used this easy banana bread recipe to make muffins. Muffins are great for sharing when we had a group to feed. I omitted the pecans and added chocolate chips for that one. I had a lot of repeat customers in the kitchen that day begging for seconds!
HOW TO MAKE BUTTERMILK BANANA BREAD:
PRO TIP! Grab a medium sized glass bowl or a 4 cup glass measuring cup. Throw it in the microwave for a minute empty, then take it out (carefully with a pot holder - Its HOT!). Put your stick of butter (still in wrapper) under the glass bowl upside down. It will only need 10 minutes to soften this way. Note: I have also been told that filling the glass bowl with boiling water to heat up also works as an alternative to the microwave.
- Step 2: Grab your most overripe bananas. The more black and squishy they are the sweeter the taste, better the scent and easier to mash. Mash to your desired consistency. We like a few lumps but you do you!
- Step 3: Mix your wet ingredients together in one bowl and your dry ingredients in the other. Slowly incorporate your dry ingredients in until its well mixed.
PRO TIP! Don't be afraid to really show that butter and sugar who's boss. This banana bread recipe needs it to be smooth and creamy. Always use room temperature buttermilk for a smooth consistency as well!
- Step 4: Add your mashed banana, pecans (if you're adding these) and if you're adding chocolate chips you would do there here as well.
- Step 5: Butter and flour your baking dish. A ceramic baking dish is the absolute best option here if you have one. Gives a wonderful crust and cooks so evenly.
- Step 6: Fill baking dish with your batter and cook for 1 hour or until you can slide a butter knife into the middle and it comes out dry.
For me, a good sweet bread might be one of the few things that is diverse enough to work for breakfast, dessert, a snack, a gift, celebration food, depression food and just about any other time.
Don't have time to make the bread now - freeze your bananas to use later!
The best method I have found for freezing bananas is to peel them and place them in a plastic freezer bag in the freezer. When you are ready to make your bread just take the bag out of the freezer and let it thaw in your sink. Be sure to drain any of the gross banana liquid out before using - looks gross but they really do work great still.
Pro Tip! Make your buttermilk from scratch.
Just add 1 tsp lemon juice (you can also use white vinegar as an alternative) in a liquid measuring cup then fill the cup with a nice creamy whole milk until it reaches the 1/4 c line. Let this mixture sit for 5-10 minutes and voila...buttermilk!
